DESCRIPTION

This Chardonnay is produced from two maturing methods: Half fermented in stainless steel to keep the typicity of the grape and the other half fermented directly in oak barrel to give fullness and structure, during 16 months. You can enjoy it with fish, seafood, crab or lobster.

To be served at an average of 55ºF.

Age of the vineyard : 15 years old.
Yields and density : 60 hl / ha with 3 700 pieds / ha.
Terroir : Situated not far from the well-known “Clos de Vougeot”, hillsides with gentle slope, east-south-east exposure; 350m above sea level, red soil with superficial structure, stony and well-plowed
Way of culture : integrated pest control, organic fertilizer.
Fermentation : The malolactic fermentation is assured 50 % in barrel (15 % in new barrel) and 50 % in stainless vat, temperature 18-19°C.
Aging : Half in stainless vat about 16 months, the other half in the barrels is “batonné”.
